i’m house-sitting for my parents, who have the most absurd backyard garden i’ve ever seen. i’m not sure what my mom’s secret is, but there are more tomatoes than i know what to do with. over the weekend, J and i made sauces and salsas, but as it turns out, for every tomato we used, two more ripened outside. so while i’ll happily eat one like an apple (with salt) or make a delicious sandwich…what else can i do with tomatoes? i might try a gazpacho, but i am running out of ideas.
