for christmas, my mom and i decided to make a pumpkin pie for dessert (instead of eating the bakery’s worth of cookies we already had). we then realized that the evaporated milk had expired in 2008. after a short debate (mom: this is fine, it’s in a can. me: mom. this evaporated milk died when i graduated college. NO.), i did a quick search for substitutes for evaporated milk. what i learned was that you can sub in sweetened condensed milk – just don’t add in any sugar! as the typical pumpkin pie recipe calls for sugar, i just…didn’t do that part. and the pie came out pretty normal! the color was a bit different than i am used to, but the flavor was spectacular.
